Salad and Salad Dressing:.
You'll need for the salad:.:
fresh romaine lettuce.
2 fresh, ripe tomatoes.
1 cup large, pitted black olives
1 bunch radishes.
1 peeled & sliced cucumber.
.
Thousand Island Salad Dressing:.
1/4 cup apple cider vinegar.
1/8 cup xtra-virgin olive oil.
1/4 cup sweet pickle relish
1 tablespoon honey.
1 cup mayonnaise
1 teaspoon crushed garlic
3 tablespoons of ketchup
1/4 teaspoon lo-cal sweetener
Salt & pepperVegetables:
medium size sweet potatoes
fresh asparagus spears.For The Main Course:.
Yves Veggie Ham Slices
can be found in local markets,
select health food and specialty shops.whole wheat dinner rolls
1/2 cup of butter/canola spread
salt & pepper to taste
Coleman's dry mustard powder
..Beverages & Dessert:
iced purified water & another
favorite beverage
fresh fruit: 1 pint of fresh strawberries
1 large carton- 32 oz.( 907g ) of
plain, low fat yoghourt
1/2 cup cooked brown rice
1/4 cup of lo-cal sweetener
Wash the vegetables and fruit under running water, rinse with purified water and drain.
Chop the romaine lettuce, slice the tomatoes, radishes and peeled cucumber, adding the drained olives to the salad bowl. Chill until serving time.Place all the Thousand Island Salad Dressing ingredients into a blender for 7 seconds and spoon into a serving dish.
Heat the rolls - served with butter-canola and the salad.Vegetables:
Place the sweet potatoes on a buttered baking dish and bake @ 400 degrees for approx. 30 minutes, or about 8 minutes in the microwave oven, until cooked through, testing with a fork. Then slit each one and fill with a little butter, adding a little lo-cal sweetener on top. Place under the broiler to brown lightly before serving.Boil the asparagus in 2 cups of purified water, covered for about 10 minutes. Served with a little butter-canola on top.
Veggie Ham Slices:
In a non-stick fry pan, lightly brown the veggie ham slices on both sides in some butter-canola, not more than 8 seconds on each side.
In a small serving dish, to 2 or 3 Tablespoons of the dry mustard powder, add a little purified water, for a tangy,sauce for the veggie ham.
Dessert:
In a bowl, add the cooked rice and lo-cal sweetener to the yoghourt and blend together.Slice the strawberries and place on top, sprinkling 1 Tablespoon of lo-cal sweetener over all.
